I came across this story as I was making the film Vitamania. When you ask sellers of vitamins why you should take vitamin supplements even if you eat a healthy diet, they will say because our food doesn’t contain all the nutrients it once did. This is supposedly due to soil depletion, cold storage, food ripening off the vine, and global transport of out-of-season foods. And to an extent this is true. Foods contain the greatest amount of nutrients if they are eaten soon after they are harvested. An unexpected source of nutrient decline is the increasing amount of carbon dioxide in the atmosphere. It causes plants to grow faster and bulk up on carbs but at the expense of other nutrients, so in percentage terms the amount of nutrients are actually declining. For now this decline is modest so supplementing with vitamin pills is probably unnecessary for most people with a healthy diet but it may be a concern in future.

Since I am an omnivore and have a high level of activity (hike 8 to more than 10 miles every day), I am not suffering. I drink plenty of water and eat a well balanced diet with high amounts of protein. I feel great and have no illnesses. I am not fat, I am very fit.

No, it won't make us fatter. You're describing a slight or possibly total keto type diversion. Eating more fats will make you leaner. Burning fat is slower/more effective than sugars. They each play a role though.

Fertilizers, is what I suspect are the issue. Who uses organic cow poo anymore, everyone uses synthetic fertilizers. And yes they have some of the most important nutrients, but I would guess they are far less complex. Furthermore they grow crops faster these days, why the crops have less time to get mature, making them less dense in nutrients. That is my 5 cents, after 1:45.

Yes it's true there is no nutrients in anything from the grocery store just salt and sugar and fat. Just look at the nutrition chart on products.. 0% everything except fat and salt or sugar. If you have some property, grow some food at least you will get nutrients. If you grow them in fertile soil and plenty of water you will end up with a bounty of decent vegetables and fruit that you can get some nutrients at least. When it's not summer you need to take vitamins and supplements regularly because food in grocery stores have 0 nutrients. Ok some items might have some vitamin c but grocery store veggies are just bland watery nothingness.

I don't think that selective breading isn't responsible for that. You say "there is no way no have breeds from 50 years ago so let's compare the exact same plant".
But some breeds, like these israelian tomatoes, are known to resist to dry conditions but to be less tasty. I'm pretty sure it also affects the nutritious quality of the food.
If your breeds are bigger and more resistants I'm pretty sure there is a side effect for that.

The lazy way is always the worst way. Fresh fruit or fuck off. You buy fresh, then freeze it. God knows wtf they do with it after they clean and cut it and how many times it has defrosted and re-froze or what it's sprayed with so it never changes color in the slightest bit.

Would be interesting if there is a diet of specific fruits and vegetables that a person could eat every day (or in cycles of several days) to get all nutrients. I hear the mantra of different colors all the time, but a lot of veggies that have the same colors can sometimes wildly differ in nutrient content/density. I've looked online for a sort of "veggie routine" I could implement into my diet to make sure I'm not lacking in anything and also streamline my diet to create a habit, but I haven't found much.

However… many of your statements from Linshan et.al. are wrong, in many cases after taking into account the size of the standard-deviation there is no significant differences. It is critical not to just look at the means; it seems the specimens varied a lot or measurements are not very accurate.

If you read nutrition labels on frozen strawberries vs raw, you will see vastly reduced vitamins in the frozen. Same with all other fruits. Granted that's trusting the labeling process and laws.

I always just buy my veggies frozen. They last longer, it's more convenient, less work to prep, and some evidence suggests as Jeff points out that nutrients are at least the same if not better in some instances than "fresh" produce. As soon as a fruit or veggie is picked, it essentially begins to die and lose nutrients. Where as fruits and veggies that are frozen, usually get harvested, sliced and then frozen almost immediately, essentially "freezing" (preserving) them in time.

On the next Myth Busting Monday, could you talk about whether the time of day in which you eat meals affect muscle gain and fat loss? (Eating a large dinner vs eating a large breakfast, etc).
